Zalata
Introduction
Zalata (or z’lata) is a simple Iraqi-Jewish chopped salad made from cucumber, tomato, red onion, coriander, lemon juice, salt and pepper.
Ideally, it’s prepared just before serving so the vegetables don’t get soggy.
Alternatively, cut the vegetables in advance and refrigerate them; then add the lemon, salt and pepper before you’re ready to eat.
Preparation method
Put the cucumber, tomato, onion and coriander in a large bowl and mix well.
Stir through the lemon juice, and add salt and pepper to taste.
Serve immediately.
