Chocolate Chip Cookies

  Introduction

When I was a child, I had a friend whose father was a rabbi and whose mother made the most delicious chocolate chip cookies. (The family was American - hence they called them 'cookies' rather than 'biscuits'.) This is her recipe, which was printed in my primary school cookbook.

The recipe makes approximately 36 cookies.

  Preparation method

1. Line two baking trays with greaseproof paper.
2. Beat margarine and sugars with an electric mixer until creamy.
3. Add the egg and vanilla and beat well.
4. Gradually add the flour, then mix in the chocolate chips with a wooden spoon or by hand.
5. Form the dough into small balls, then flatten and place onto the baking trays, making sure they are well-spaced as they will expand during baking.
6. Bake at 175C for 12-15 minutes.
7. Allow to cool on a wire rack before storing in an airtight container.

  • 125g margarine (or butter if you are happy for them to be dairy)1/2 cup caster sugar
  • 1/2 cup raw sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 2 cups self-raising flour
  • 1/2 cup dark chocolate chips
