Israeli Couscous (Ptitim)

  Introduction

This recipe is from Chef Einat Admony, the owner of Balaboosta restaurant in New York City.

  Preparation method

1. Heat the oil in a medium saucepan over medium heat.
2. Add the onion and saute just until translucent, about 7 minutes. Add the couscous and salt and saute another 2 minutes.
3. Add the vegetable broth and bring to the boil.
4. Lower the heat and cook just until the liquid has evaporated, about 10 minutes.
5. Remove from the heat and serve immediately

 Ingredients

  • 2 tablespoons canola oil
  • 2 medium yellow onions, finely chopped
  • 2 cups Israeli couscous 
  • 2 teaspoons kosher salt
  • 3 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1/2 teaspoon turmeric
  • 1 teaspoon paprika
  • Salt
  • Pepper
