Grandmom Mary’s Apple Cake
5 nice apples cut up into bite-sized pieces, with skin on
3 cups flour
1 and 1/2 cup sugar
1/2 cup brown sugar
1 cup cooking oil
1/4 cup orange juice
4 eggs
3 tsp. baking powder
2 tsp. vanilla
choppped nuts if you want
1 tsp cinnamon
½ tsp nutmeg
grease and flour tube or bundt pan
Toss the cut-up apples with 1 cup of sugar, and the cinnamon and nutmeg and set aside in a separate bowl. Mix the other ingredients in order, in a food processor or use a mixer to stir the batter. If it seems really thick, add a few tablespoons more of orange juice.
Pour half the batter into a greased and floured pan. Sprinkle half of the cut-up apple mixture on top of the batter, and then pour any remaining batter on top of that. Put the rest of the apples on top. Sprinkle with additional cinnamon, brown sugar and chopped nuts.
Bake at 350 for 55-65 minutes or until it looks brown and done and dry to the touch.
Pop it out of the pan when it is just a tiny bit warm to the touch.
